Spicy Lentil Taco's - Two Ways!

A few weeks ago, I was doing the nightly “what do I want to eat (and cook) for dinner” routine. Lucky for me I had picked up some steamed lentils from Trader Joe’s. I make a divine summer salad that includes lentils, but that particular recipe was not quite hitting the spot. I only had a slight idea of where my next steps were going to take me, but next thing I knew, a beautiful high protein, low in calories, nutrition packed dinner was right before my eyes. I must admit that I was a little impressed with myself. This girl loves an experiment gone right! 

I was also reminded of how much I love lentils!  Lentils are legumes - beautiful & tasty. They help reduce blood cholesterol, stabilize blood sugar, are high in fiber and are an excellent source of protein. Twenty-six percent of lentil’s calories are attributed to protein, which makes them a fabulous source of protein for vegetarians and vegans. Lentils also provide important minerals and  B-vitamins. Just 230 calories for a whole cup of cooked lentils. 

I hope you enjoy them as much as we did! My family likes tortilla's and a little cheese with their taco's ... viola .. two way Spicy Lentil Taco’s.

Spicy Lentil Taco's - Two Ways -  Serves 6 

1 tbsp organic extra virgin olive oil
1 organic onion, finely diced
3 organic garlic cloves, minced
1 package steamed lentils - (This is one recipe where I really like skipping a step)
2 - 3 tbsp water
1 tsp unrefined sea salt
1/2 tsp organic cumin, dried
1/2 tsp chili powder
2 tbsp fresh organic cilantro
*Adjust spices to your liking (green chili would be awesome!)

In a large skillet or wok, heat olive oil on medium. Add onions, garlic & pinch of sea salt. Sauté for about 8 minutes. Add lentils with a little bit of water to help break them apart. Add seasonings and heat through. Remove from heat once warm.

2 organic avocados, roughly mashed
2 organic carrots, julienned
1/2 half head organic romaine lettuce, finely chopped
Handful sunflower sprouts or micro-greens
Fresh salsa
Fresh organic lime wedges - squeeze prior to feasting
Whole organic romaine lettuce leaves, or organic soft corn tortilla (read the label to avoid nasty additives)
Shredded cheese - if you please

Vegan Style - Lettuce wrap

Lay out romaine lettuce leaves, add lentil mix, carrots, avocado, salsa, sprouts and fresh lime.

Soft taco Style-

Arrange all ingredients in a taco. Add a sprinkle of cheese if you like.
