Raw Nanaimo Bars

First layer:
1 cup shredded unsweetened coconut
10 - 12 medjool dates
1/2 cup raw almonds
1/4 cup cacao powder

Second layer:
2 cups raw cashews
1/4 cup raw coconut oil
1 1/2 tbsp raw honey
1 tbsp pure vanilla

Top layer:
1/3 cup raw coconut oil
4 tbsp raw cacao powder


1- In a food processor, mix together dates and almonds until a crumbly consistency is reached. Next pulse in the cacao powder and shredded coconut. Press into a non-stick 8 x 8 inch square pan.

2-Blend the raw cashews into a fine powder. Add in coconut oil, honey & vanilla- it should be thick and creamy.  Spread this mixture over the bottom layer, and place in freezer to set while you make the chocolate.

3 -Put the coconut oil in a bowl, and place that bowl inside another bowl filled with hot water. Allow the coconut oil to heat up just enough to melt. Add the cacao powder and mix well.

4- Pour chocolate evenly over the top of bars. Put back in fridge to harden for about 5 to 10 minutes, before cutting into 18 even pieces.  These will keep in fridge for up to a week.

The original version takes a lot of time, patience and skill. I truly do not have baking skills, and I have never actually made the original version. Luckily Christi makes an annual batch and I would happily savor one... or two! They are absolutely rich and decadent!
