1 pound ground turkey breast
1 shallot, diced
2 garlic cloves, minced
2 fresh basil leaves, or 1 teaspoon dried basil
1 teaspoon oregano, dried
2 tablespoons fresh cilantro, finely chopped
1 organic lemon, zested
1 tablespoon flax seed meal
2 tablespoons extra-virgin olive oil or coconut oil
In a stainless steel bowl or glass bowl, combine all the ingredients together. Use a rubber spatula to gently fold everything together. Be careful to not over-mix. Allow to sit in the refrigerator for one hour.
Preheat the oven to 400 F.
In a large stainless steel sauté pan, heat olive oil over medium heat. Pinch off two tablespoons of the turkey mixture at a time, and roll into little balls. Gently cook the turkey until lightly browned, about 4 minutes. Next, transfer the turkey meatballs to the oven to finish cooking through.
