Sweet Potato Fries

Serves 2-3 people as side


2 medium sweet potatoes or jeweled yams, wash thoroughly & cut into long, uniform fry-like or wedge pieces
3 tbsp raw coconut oil - melt if necessary
Himalayan sea salt to taste
Freshly ground pepper taste


Heat oven to 400 degrees.

Line a baking tray with parchment paper or foil. In a large bowl toss sweet potatoes with coconut oil. (I usually toss sweet potatoes with my bare hands). 

 Dump fries on baking sheet. Arrange so that fries are not crowded on the tray. Sprinkle with salt and pepper.
