Spicy Lentil Taco's | Two Ways

Prep Time

20 minutes


1 tbsp organic extra virgin olive oil

1 organic onion, finely diced

3 organic garlic cloves, minced

1 package steamed lentils from Trader Joes - (This is one recipe where I really like skipping a step)

2 - 3 tbsp water

1 tsp unrefined sea salt

1/2 tsp organic cumin, dried

1/2 tsp chili powder

2 tbsp fresh organic cilantro

*Adjust spices to your liking (green chile would be awesome!)

In a large skillet or wok, heat olive oil on medium. Add onions, garlic & pinch of sea salt. Sauté for about 8 minutes. Add lentils with a little bit of water to help break them apart. Add seasonings and heat through. Remove from heat once warm.

2 organic avocados, roughly mashed

2 organic carrots, julienned

1/2 half head organic romaine lettuce, finely chopped

Handful sunflower sprouts or micro-greens

Fresh salsa's

Fresh organic lime wedges - squeeze prior to feasting

Whole organic romaine lettuce leaves, or organic soft corn tortilla (read the label to avoid nasty additives)

Shredded cheese - if you please


Vegan Style - Lettuce wrap

Lay out romaine lettuce leaves, add lentil mix, carrots, avocado, salsa, sprouts and fresh lime.

Soft taco Style-

Arrange all ingredients in a soft corn tortilla and warm in skillet. Add a sprinkle of cheese if you like.
