It is ideal for fish to marinate for about 20-30 minutes.
3 tbsp organic extra virgin olive oil
2 tbsp fresh lemon juice
2 organic garlic cloves, minced
1 large organic shallot, minced
1 tsp organic ground cumin
½ tsp unrefined sea salt
dash organic cayenne pepper
¼ cup fresh organic cilantro, coarsely chopped
1 tuna steak OR halibut fillet (about 8-10 ounces, 1 1/4 inches thick)
Prepare marinade in a shallow non-aluminum dish - coat fish completely. Cover and refrigerate for at least 1 hour. Gently warm & boil the remaining marinade and reserve.
2 organic fresh ripe tomatoes, chopped
½ cup organic black beans, rinsed
½ organic jalapeño chile, finely minced
2 tbsp organic red onion, chopped
2 tbsp fresh organic cilantro, chopped
¾ tsp unrefined sea salt
¼ tsp fresh ground black pepper
Combine all ingredients, cover and refrigerate for up to one hour.
Wrap tortillas in aluminum foil and place on the edge of grill to warm. Grill fish 4-5 minutes on each side. Toss cubed fish into reserved marinade. Assemble taco's with all the fixings!
**For a lighter version, simply pile fish, salsa, sprouts, avocado and squeeze of fresh lime on a bed of greens. (YOU WILL LOVE IT!)
