Roasted Cauliflower

1 head organic cauliflower
1 tbsp organic extra virgin olive oil
Sea salt
Freshly ground black pepper

Optional Ingredients:
Fresh garlic, minced
Fresh lemon juice and/or zest
Raw parmesan cheese


Heat oven to 400 degrees. 

Cut the cauliflower leaves off and cut head into four pieces. Then cut each quarter into 6-8 pieces.

Rinse cauliflower florets in a colander, and shake dry. In a large mixing bowl, drizzle olive oil on the sides and bottom. Add cauliflower and toss until florets are lightly coated. Sprinkle with salt and pepper. 

Transfer to a foil-lined baking sheet. Arrange so that florets have space. Roast for about 10 minutes, and toss and move around, return to oven and continue to roast for another 10 minutes (sprinkle the parmesan cheese if desired).
