Oatmeal Power Bites

2 cups organic old fashioned rolled oats - look for certified gluten-free oats
1/2 cup organic sunflower seeds (raw or toasted)
1/2 cup organic raisins or goji berries
1/2 cup carob chips or cacao nibs
2 tbsp raw cacao powder
2/3 cup organic almond or peanut butter
4 or 5 organic dates, pit removed, chopped up very small
2 tbsp organic coconut oil


Mix all ingredients together using a mixer on low speed. Mix until well combined. Mixture is quite dry, but you should be able to roll into 2-bit balls. If too dry, add a little water and/or nut butter.

Store in glass container in freezer or fridge.
