Napa Cabbage Salad with Asian Miso Dressing

Napa Cabbage Salad
1/2 head organic napa cabbage (1/2 of a large head)
2 organic carrots, julienned
1 small organic cucumber, diced
1/2 cup organic sugar snap peas, diced into bite size pieces
1/2 organic red or orange bell pepper
1 tbsp fresh organic mint leaves, diced
2 tbsp fresh organic cilantro
2 tbsp raw hemp hearts
handful of organic sunflower sprouts

Asian Miso Dressing
1 tbsp organic, unpasteurized miso
1/2 inch minced ginger root
2 tsp sesame oil
1 tbsp organic extra virgin olive oil
2 tbsp fresh lemon juice
2 tbsp water


Rinse napa cabbage and chop with a sharp knife. Give it a few whirls in a salad spinner. Add to big salad bowl. Add carrots, cucumber, peas, bell pepper, mint, cilantro and sunflower sprouts. *Add cashews if desired.Mix all ingredients for dressing and whisk together. Pour over salad mixture and toss.*Half romaine and half cabbage works very well as an alternative to napa cabbage.
