Mexican Style Black Beans


Prep Time

Soak beans overnight - cover beans with water and add lemon juice or apple cider vinegar {break down phytic acid}

Ingredients

1 cup dried black beans
4 cups water
3 cloves garlic, minced
1 jalapeno pepper, minced
1/2 teaspoon cumin powder
1/2 teaspoon chili powder
Juice of one lime
Sea Salt to taste

Directions

Soak the beans overnight. Drain and rinse beans well.

Add to a large pot with 4 cups fresh water and bring to a boil. Add garlic and jalapeno and cook for 1-1.5  hours or until beans are soft.

Add cumin, chili, lime and salt to taste.
