Preheat oven at 200 degrees - Use Convection setting if you have it.
Rinse kale thoroughly . Gently tear kale pieces from center stem. Rinse water using salad spinner, and then lay out on a few paper towels.
In a large bowl, drizzle olive oil very lightly over kale pieces. Take your hands and rub the kale with your fingers, until all kale is lightly coated with olive oil.
Shake gomasio, and toss with your hands or a spatula.
Place kale pieces on parchment paper lined pan. Be careful not to overlap pieces too much. Bake the kale in batches.
Cook chips for 10-15 minutes.
**Closely watch the first time, as all ovens bake differently.
