Greek Millet Salad

**Pre-prep: Soak the millet overnight in water & rinse well before cooking.

Cooking Time

15 minutes




3 cups water1 cup dried organic millet
1/4 cup pitted & chopped kalamata olives
1/4 cup drained capers
2 tbsp minced organic scallions
1 tbsp organic fresh lemon juice
2 tsp organic dijon mustard
1/2 tsp unrefined sea salt
1 tbsp raw apple cider vinegar
2 tsp organic minced shallot
1 tsp organic dried oregano
1/2 cup organic extra-virgin olive oil


In a saucepan, bring the water to a boil. Reduce the heat, & add millet. Simmer until cooked, about 15 minutes. Strain & let cool.

Blend dressing ingredients together in a blender. Add the millet to a large mixing bowl, pour dressing on top & add all the other ingredients.

Fresh spinach or romaine lettuce is also awesome to add in.
