Falafel Patties | Oven-bakes


1 handful organic parsley, about 1 cup
4-5 sprigs organic cilantro1
 garlic clove, minced
1/2 lemon, freshly squeezed
1 tsp ground cumin
1 tsp himalayan sea salt
fresh ground pepper
1/3 GF oat flour
2 tablespoons raw walnuts
1 cup organic dried chickpeas/garbonzo beans, soak for 24 hours OR 1 can organic garbonzo beans


Preheat oven to 375 degrees F.

In a food processor, pulse all other ingredients and pulse until mixed well. Do not over-process

Line a cookie sheet with foil and stream about 1 tbsp extra virgin olive oil on foil. Next, make small little patties with chickpea mixture and line up on cookie sheet. Bake patties for about 30 minutes. Falafel patties should be warmed through and be a little crisp on each side.

Serve with tahini, tatziki or hummus and a big green salad. Another option is to wrap patties in a chard leaf with hummus and sliced veggies.


Chickpeas, also known as garbanzo beans, belong to the legume family along with lentils and peas. They provide a good source of protein and are available year round as dried or canned. Garbanzo beans comes in different colors including black, green, red and brown beans. Garbanzo beans has excellent source of molybdenum and manganese. Also they provide a good source of folate, fiber, iron, phosphorus and copper. Chickpeas can be used in salads, stews and curries.
