Preheat oven to 375 degrees F.
In a food processor, pulse all other ingredients and pulse until mixed well. Do not over-process
Line a cookie sheet with foil and stream about 1 tbsp extra virgin olive oil on foil. Next, make small little patties with chickpea mixture and line up on cookie sheet. Bake patties for about 30 minutes. Falafel patties should be warmed through and be a little crisp on each side.
Serve with tahini, tatziki or hummus and a big green salad. Another option is to wrap patties in a chard leaf with hummus and sliced veggies.
