Crunchy Quinoa Salad

Cook quinoa according to package directions. Remember to rinse quinoa before cooking.

Ingredients

1/2 cup cooked organic quinoa, steamed & chilled
1 head organic romaine lettuce, chopped finely
1 organic carrot, chopped
1 organic red pepper, chopped
1 organic cucumber, chopped
1 organic avocado, cubed
handful organic cherry tomato, cut in half
1/2 can organic garbanzo beans, drained & rinsed
add a few sprinkles of raw sunflower seeds

Directions

Rinse and chop the lettuce, combine all ingredients in a large salad bowl. Any and all vegetables work in this salad... get crazy!

Dressing:
1 lemon freshly squeezed (2 tablespoons or more)

2 T red wine vinegar or apple cider vinegar
4 T extra-virgin olive oil
1 t oregano
1/2 t unrefined sea salt
Freshly ground pepper
Whisk all ingredients together & pour over salad!

Don’t be afraid to play with the flavor. I like to have more lemon/vinegar than olive oil... more flavor!
