Clif-bar Bites


Prep Time

10 -15 minutes

Ingredients

2 cups organic oats {I use certified gluten-free}
1/2 cup any organic nut/seed butter
10-12 medjool dates, pitted
1 teaspoons pure vanilla extract {alcohol-free}
1/2 teaspoon unrefined sea salt
3 tablespoons mini-chocolate chips {I love Enjoy Life brand - allergy free}
3 tablespoons nut milk

Directions

In a food processor fitted with an s-blade, combine the oats and salt; process until ground up and somewhat fine. Next add nut/seed butter, dates and vanilla. Pulse until combined - do not over-process. Add in chocolate chips or cacao nibs; pulse a few times to combine. Drizzle in the nut milk at the very end to bind everything together.

Use clean hands to roll dough into bite-sized ball pieces. Store in the freezer or refrigerator in an air-tight container.
