In a food processor fitted with an s-blade, combine the oats and salt; process until ground up and somewhat fine. Next add nut/seed butter, dates and vanilla. Pulse until combined - do not over-process. Add in chocolate chips or cacao nibs; pulse a few times to combine. Drizzle in the nut milk at the very end to bind everything together.
Use clean hands to roll dough into bite-sized ball pieces. Store in the freezer or refrigerator in an air-tight container.
