Chicken Cashews Lettuce Cups

1 1/2 lb. fresh organic chicken breast, cut into very small pieces (little square like)
1 tbsp extra virgin olive oil or unrefined coconut oil
1 tbsp fresh grated ginger
3 garlic cloves, freshly pressed
3 tbsp tamari, gluten free (NO SOY SAUCE - You will be disappointed)
1/2 bunch organic scallions, finely chopped
1/4 cup fresh thai basil, finely chopped
1/4 cup organic raw cashew halves

1 head organic romaine, or bibb lettuce leaves, washed and slightly dried
2 organic carrots, shredded
1 organic red bell pepper, finely sliced
Few handfuls fresh sprouts - bean sprouts, broccoli sprouts, pea sprouts, sunflower sprouts or micro greens


Heat oil preference in a big wok style skillet over medium heat. Mix in chicken, fresh ginger and fresh garlic. Sauté mixture about 5 -7 minutes. Add scallions and fresh thai basil, continue to cook until chicken is cooked through. Remove from heat. Add tamari and raw cashews. 

Lay out lettuce cups and fill with chicken mixture and fresh vegetables.
