Cacao Nib Cookies | Raw

1 cup raw cashews
2/3 cup rolled oats
3 tbsp grade b pure maple syrup
1 teaspoon pure vanilla extract
3 tbsp raw cacao nibs
1/8 tsp unrefined sea salt


In a food processor, combine cashews and oats until mixture is a fine powder - Do not over-mix! Add the remaining ingredients and process until a ball forms in the bowl.

Place in the refrigerator for about 10 minutes. Roll into golf ball sized balls. You can flatten out, or keep them in ball form. 

Store in a air-tight glass container in the fridge.
