Butternut Squash Fries

Pre-heat oven to 400 degrees. Use convection if you have it.

Cooking Time

50 minutes, tossing about every 10 minutes

1 small organic butternut squash (cut in somewhat thin strips)
2 tbsp organic extra virgin olive oil OR 2 tbsp raw coconut oil
1/2 tsp fresh ground pepper
1/2 tsp sea salt


Place squash fries into a large bowl. Using bare hands, coat fries with coconut (or olive) oil. Sprinkle with pepper and sea salt.

Spread fries evenly on a parchment paper lined baking sheet. Bake for about 45-50 minutes. Check half way through baking time and toss.
