Preheat the oven to 350 F. Line a loaf tin with parchment paper and grease the paper with a little coconut oil.
In a mixer, combine the pumpkin, coconut oil and eggs. Mix well. Next add dates, maple syrup and vanilla. Mix again. Next add all the other ingredients except for mini-chocolate chips. Gently combine, but do not over-mix. Add 1/4 of chocolate chips to mixture, and combine with a spatula.
Put mixture in the prepared loaf pan. The mixture is quite thick; flatten and smooth with a spatula. Add the remaining chocolate chips to the top of the loaf and gently press down.
Bake for about 40 minutes. The edges will be slighly brown and a toothpick will come out clean. Do not over bake.
Allow to slightly cool on wire rack. Then gather your friends/family (no dogs) in the kitchen for a cup of tea, and the most divine Autumn treat ever. The best news... no sugar hangover!

I have a special and delightful treat for you today. I am pretty pumped up about this tasty treat. I am not a baker, but today is the exception! After several not-so-right attempts, I NAILED it! Yes, I mean got it SO freaking right on! This is by far my most favorite concoction that I have personally ever 'baked'.
My family a.k.a, taste testers, happily agreed. This IS the best 'thing' I have ever baked. (Yes, still quite pumped!) I also have some side-bar tasters (Saban boys + mom), and was on my way to get their approval, when POOF... the bread disappeared. I am talking the entire rest of the loaf. In dismay, I spotted my furry friend who was happily licking her chops! So there you have it... 100% Pehrson family approved. (Saban's I promise to make it up to you).
